Dandelion Chocolate

Tasting notes: roasted nuts, cocoa powder, and toasted bread

We craft our 100% unsweetened chips from just one ingredient: Camino Verde, Ecuador cocoa beans. To create the Dandelion version of classic baking chocolate – perfect in any sweet or savory recipe calling for unsweetened chocolate – Eric roasts these beans at a fairly high temperature to bring out their fudgy, nutty tasting notes, and we fully temper the chocolate for super-smooth melting. The resulting chips make for the chocolatiest desserts ever, with a rich flavor and moist texture you won't get using just cocoa powder. To whip up paleo- or keto-friendly versions of your favorite cakes and brownies, just incorporate your choice of alternative sweetener along with the chips.

The beans for these chips are produced by Camino Verde Cacao, located in Duran, central Ecuador, near Guayaquil. Vicente Norero, the owner and general manager, is one of the most innovative cocoa producers we know. He buys freshly harvested, unfermented beans from over 100 farms and associations around Ecuador and aims for optimal fermentation and drying, highlighting nutty flavor notes we love.

Just Cocoa – Nothing Else

Classic Baking and Cooking

Our flavorful, single-origin version of traditional baking chocolate, these chips retain the beans' cocoa butter (unlike plain cocoa powder), and will bring extra fudginess to your mom’s brownies. As a savory twist, enhance the depth of a zesty mole or barbecue sauce by stirring in a square or two.

Add Your Own Sweetener

These 100% unsweetened chips contain zero grams of sugar, and blend beautifully into recipes along with your choice of sweetener, whether maple syrup, honey, coconut sugar, or monk fruit. Try stuffing dried dates with chips for a naturally sweet treat on the go.

For Your Daily Routine

Melt a few squares in morning coffee to make your own mocha, and take granola or oatmeal to the next level with a handful of chips. Toss chips, roasted nuts, and dried fruits with a pinch of flaky salt for satisfying snacking at your desk or on a hike; or nibble on a square dipped in nut butter for an any-time energy boost.

Recipes

Christina's Chocolate
Cloud Cake

A simple, flourless, four-ingredient cake with the density of a truffle and the lightness of a soufflé. This is great as is, or topped with whipped cream and spring berries or, add a fifth ingredient like a splash of Grand Marnier or Kahlua.

Janelle's Mexican
Mocha Flan

A decadent cross between a pot de crème and flan, inspired by Janelle's teenage memories of terrible gas-station Mexican mochas and a perfect marriage of coffee and chocolate. 100% chocolate adds flavor without adding extra sweetness.

Meredyth's
Hot Fudge Sauce

More chocolate, less cooking time, and a pinch of salt: Meredyth's recipe creates a super smooth, velvety sauce that lets 100% Ecuadorian cocoa take center stage. The perfect accompaniment for your daily bowl of ice cream.

Katie's Creamy
Matcha Cake

Our 100% chips are the perfect ingredient for an irresistible cookie crust, and a great complementary flavor to the matcha. With the unsweetened chocolate, control exactly how much and what type of sugar goes into the final creamy matcha cakes.
