Tasting notes: roasted nuts, cocoa powder, and toasted bread
We craft our 100% unsweetened chips from just one ingredient: Camino Verde, Ecuador cocoa beans. To create the Dandelion version of classic baking chocolate – perfect in any sweet or savory recipe calling for unsweetened chocolate – Eric roasts these beans at a fairly high temperature to bring out their fudgy, nutty tasting notes, and we fully temper the chocolate for super-smooth melting. The resulting chips make for the chocolatiest desserts ever, with a rich flavor and moist texture you won't get using just cocoa powder. To whip up paleo- or keto-friendly versions of your favorite cakes and brownies, just incorporate your choice of alternative sweetener along with the chips.
The beans for these chips are produced by Camino Verde Cacao, located in Duran, central Ecuador, near Guayaquil. Vicente Norero, the owner and general manager, is one of the most innovative cocoa producers we know. He buys freshly harvested, unfermented beans from over 100 farms and associations around Ecuador and aims for optimal fermentation and drying, highlighting nutty flavor notes we love.
