For our first Hawai’ian bar, we connected with Green Farms Hawaii in Mililani, central Oʻahu, where Danny Green and team grow cacao among breadfruit, limes, and honey. These beans are the first ever exported from Hawai’i for chocolate making; it was a challenge to get them, and this might be our only chance to make a Mililani chocolate bar. Nate slow-roasts these beans to highlight bright, tropical-fruity notes and natural sweetness.

All of our single-origin chocolate is made with just cocoa beans and sugar; no added cocoa butter, lecithin, or vanilla. Our chocolate is free of soy, dairy, eggs, and gluten, and it is made in a factory that does not process nuts.

About Mililani, Hawai'i

In 2019, we first learned of the beans produced by Danny Green of Green Farms Hawaiʻi in Mililani, in central Oʻahu, when trying Mānoa Chocolate’s Mililani bar. Danny runs an agriculture business that creates many products, and he’s especially keen on cocoa. He’s been working with our friends at Mānoa Chocolate for years, and 2020 was the first year that he produced more cocoa than Mānoa had the capacity to buy. This is where relationships come in; Dylan, founder of Mānoa, knew whom to get in touch with to help Danny sell the rest of his harvest. We were grateful and honored that Danny would work with us. His farm, in central Oʻahu, is perfectly laid out with precise attention to detail. His trees have only been productive for a few years, but he’s already produced some incredibly interesting cocoa that has made some terrifically tasty chocolate. While we don’t know if Danny will always have enough beans to sell us, we’re happy to be able to try our hand with this 2020 harvest, and are interested to see what comes next!
