Since 2010, we’ve sought to showcase diverse cocoa origins’ flavors, carefully roasting beans to enhance distinctive aromas. Our Grand Tumaco Bonbon Tasting celebrates the Tumaco region, where Cacao Hunters — the first Colombian company to source cacao and produce cocoa within Colombia — collaborates with Tumaquian farmers to preserve native cacao species. 

Tumaco chocolate is uniquely rich and mellow; it accents other ingredients especially well. Single Origin Truffles’ velvety ganache highlights Tumaco’s natural dulce de leche creaminess. Buttery, complex Muscovado Caramel, slow-cooked to molasses-y depth, harmonizes beautifully with Tumaco’s honey note. And textural Hazelnut-Coffee Praliné, made of toasty hazelnuts and vanilla-citrusy organic Colombia Finca Roma coffee beans, echoes and enhances Tumaco’s almondy, chocolate-wafer aromas.

Head Chocolatier Nicholas Bonamico runs Dandelion’s Confections program; his small team produces our Single-Origin Truffle Collection, Single-Origin Chocolate Nut Spreads, and seasonal confections by hand. Nicholas takes inspiration from the abundance of locally grown California produce to create elegant confections that tell a story. His ultimate mission is to honor and showcase the farmers and producers behind each ingredient, through origin-focused, indulgent "mementos" to savor.
