notes from the maker
“Maya Mountain cacao has been very consistent through the years I've worked with it. I always enjoy roasting it on the lighter side to bring out the more delicately sweet and fruity notes. With this harvest, I was able to hone in on a dairy-like strawberry note with a chocolate finish - which is how the tasting notes of strawberry ice cream and chocolate truffle came to be.”
– Trevor, Senior Chocolate Maker
Maya Mountain Cacao (MMC) is a social enterprise established to connect small-scale cacao growers in Belize with the international specialty-cocoa market. Located in Toledo, they were the first company in the country to buy wet beans from farmers, and to emphasize the importance of bean quality. MMC purchases from family farms in southern Belize — the majority of whom identify as indigenous Q’eqchi’ and Mopan Maya.
