Flaky, homemade pie is a favorite dessert at Dandelion, and Nicholas and our Confections team craft these signature, drum-shaped Timbales to evoke warm memories of autumn pies savored during years past. Crisp Yountville, California Jacobsen Orchards organic crabapples and sweet-tart Philo Farm organic Bramleys are puréed together, then reduced to a smooth caramel fragrant with sweet aromatics. The buttery fruit caramel fills a house-made almond praliné crust, evoking a traditionally American apple pie — all encased in our mellow 70% House Blend chocolate. Nicholas recommends enjoying your Apple Pie Timbale during a leisurely stroll through crisp fall air.

Head Chocolatier Nicholas Bonamico runs Dandelion’s Confections program; his small team produces our Single-Origin Truffle Collection, Single-Origin Chocolate Nut Spreads, and seasonal confections by hand. Nicholas takes inspiration from the abundance of locally grown California produce to create elegant confections that tell a story. His ultimate mission is to honor and showcase the farmers and producers behind each ingredient, through origin-focused, indulgent "mementos" to savor.
