Swedish-born Håkan Mårtensson, founder of Beacon, New York’s HÅKAN Chocolatier, is known for crafting confections with rare, uniquely sourced ingredients and a distinctly Nordic sensibility — balancing salt and sweet, bitter and sour, rough and refined flavors. For this five-piece seasonal collaboration, he creates a silky, fluid-caramel Bonbon from tangy puréed kalamansi (a sweet-tart citrus from the Philippines), infused with warm, floral Guatemalan cardamom. Best enjoyed in a single bite, each liquid caramel is encased in a crisp shell of our 70% Camino Verde, Ecuador chocolate, known for its deep, toasty cocoa notes.
