Our Chocolate Makers are dedicated to their craft. They strive to showcase the best inherent flavors of each bean, in tribute to our cocoa-producing partners’ careful cultivation, fermentation, and drying.

For every new harvest of beans, our Chocolate Makers experiment over many weeks, making multiple small test batches of chocolate to perfect the flavor profile. Their expertise allows them to accentuate beans’ most delicious inherent aromas — from classic chocolate and rich cream, to tart fruit and delicate herbaceousness.

This special five-bar set, curated by our chocolate makers, showcases five origins’ distinctive flavors: the culmination of terroir, fermentation, and our makers’ craft. We invite you to unwrap and savor our chocolate-making team’s selected favorites.

THE Five ORIGINS

ANAMALAI, INDIA

At Regal Farms, just outside Anamalai in the southern Indian state of Tamil Nadu, brothers-in-law Karthikeyan Palanisamy and Harish Kumar grow cacao trees among coconut palms, nutmeg trees, and other smaller crops, improving both the health of the soil and the quality of the crops.

Freddy Salazar, the general manager of Costa Esmeraldas, produces a fascinating and unique cacao that we make into one of our best selling bars. Located near Esmeraldas, in the Esmeraldas Province of Ecuador, Costa Esmeraldas started as a very different farm when the Salazar family purchased it over a decade ago. The aim at Costa Esmeraldas is to co-exist with their surroundings. It is extremely important to them to remain a good neighbor to their nearby communities, flora, fauna, workers, and everyone involved in or impacted by their operations.

MAYA MOUNTAIN, BELIZE

Located in Toledo, near the eastern coast, Maya Mountain Cacao (MMC) is the first company in Belize to buy wet beans from farmers, and to emphasize the importance of bean quality. MMC currently buys from 450 farmers who are registered and certified organic — the majority of whom identify as indigenous Q’eqchi’ and Mopan Maya.

TUMACO, COLOMBIA

Having built strong alliances with Tumaquian producers, Cacao Hunters support local families by providing stable, higher-than-market prices for good cocoa. They work with a variety of regional associations, each of which ferments its own cacao with the company's assistance and advice. Beans from Tumaco make up more than 60 percent of the cocoa that Cacao Hunters uses for their own chocolate brand; we feel fortunate to be able to procure some of these flavorful beans to use ourselves.

ZORZAL COMUNITARIO, D.R.

These cocoa beans come from a collection of farms surrounding Reserva Zorzal, a bird sanctuary in the Dominican Republic. The sale of cocoa produced on the Reserve helps fund habitat preservation for the endangered Bicknell’s thrush.
