At Maya Mountain Cacao in Belize, multiple talented, resilient women are shaping the international cocoa industry. This limited-edition set — in honor of International Women’s Day — features three uniquely flavorful Maya Mountain chocolate bars which showcase the women’s impressive work.

Cocoa “terroir” (as in wine) reflects an origin’s climate, soil, topography, and surrounding flora and fauna; all affect beans’ flavors. Beyond terroir, Maya Mountain’s matriarchs’ skillful fermentation practices give the beans invaluable character. 

Here, you’ll savor three Maya Mountain bars whose tasting notes reflect agricultural expertise and sustainability, ethical production, transparent trade, and reverence for flavor. Two 70% bars offer a rare chance to taste how our culturally distinct San Francisco and Tokyo chocolate-making teams calibrate roast profiles to local palates, thereby coaxing different flavors from the same well-produced Maya Mountain beans. And an 85% bar offers intense flavor for fans of extra-dark chocolate. (High-percentage bars are tricky to make, as cocoa beans’ natural flavors express very clearly with little sugar present; Maya Mountain beans provide the exceptionally well-balanced flavors needed.) ABOUT EMILY STONE

Emily Stone founded Maya Mountain Cacao and Uncommon Cacao in Toledo, Belize in 2010, connecting small farms to the specialty-cocoa market through a centralized fermentation center. The companies ensure farmers’ fair wages, while committing to a transparent supply chain, and ethical practices.

ABOUT MARIA CAL

Maria Cal, matriarch of a family of ten in the Toledo village of San Antonio, expertly cultivates flavorful cacao. As one of over four hundred organic-certified farmers contributing to MMC, she brings Belizean cocoa to global craft makers, and helps shape an equitable industry. Maria, via her MMC partnership, gains higher, more stable income, plus access to sustainable farming resources, empowering her to invest in her family’s future.

ABOUT THE ORIGIN

MAYA MOUNTAIN, BELIZE

Maya Mountain Cacao (MMC), located in Toledo, was the first company in the country to buy wet cacao beans directly from farmers, and to emphasize the importance of quality and consistency. With a centralized fermentary, MMC purchases from 411 family farms in southern Belize, maintaining a consistent price throughout the season, and fostering long-term relationships; most farmers have supplied beans for more than two years.
