For this five-piece seasonal collaboration, pastry chef Katherine Clapner, founder of Dallas, Texas confectioner Dude, Sweet Chocolate, offers a slightly savory riff on traditional spiced eggnog. Instead of familiar sweet holiday spices, she infuses ras el hanout — a savory spice blend from Morocco — into square tablets of our 70% Semuliki Forest, Uganda chocolate. She adds toasty candied Texas pecans for a satisfying crunch; while the chocolate itself, with its subtle tropical-fruit notes and soft cocoa richness, complements the savory warmth of the spices. Together, these elements create a complex, unexpected treat that is festive, approachable, and unmistakably Katherine Clapner.
