When we consider our year in chocolate bars, we see a journey spanning eight countries and countless hours of roast tests and flavor development. It's a year of sorted beans, filled molds, and thousands of meticulously tempered bars. We've set aside a selection of these bars to create this Collection — a time capsule of our passion and production. Ten unique bars offer a wide spectrum of flavors, from the comforting, creamy fudge notes of our Kpalime, Togo bar to the vibrant, aromatic fruit aromas of the Kokoa Kamili, Tanzania bar, crafted in our Tokyo factory.

This assortment highlights a year of new and continuing producer relationships. Notably, 2025 introduces beans sourced from Takyikrom, Ghana, a community dedicated to sustainability and low-carbon impact, with whom we've established an exclusive partnership. Also new is our 85% Semuliki Forest, Uganda bar, which has quickly become a factory favorite. 

Additionally, we’ve included the result of a delightful "happy accident": our one-of-a-kind, exclusive, and unrepeatable "Double-Origin Bar" — a unique opportunity to experience the harmonious blend of our Ghanaian and Colombian chocolates. We sincerely hope you savor the unique flavors of these ten bars as much as we do.

All of our single-origin bars are made with just cocoa beans and sugar; no added cocoa butter, lecithin, or vanilla.

Our chocolate is free of soy, dairy, eggs, and gluten, and it is made in a factory that does not process nuts.

ADDITIONAL INFORMATION

Storage instructions:

  • Store in a cool and dark place; back of pantry is ideal
  • Best results somewhere between 40°F-68°F
  • Keep away from heat and direct sunlight
  • Keep away from strong odors
  • Do not freeze
  • Two-ingredient chocolate won’t go “bad” like milk chocolate or chocolate with additional ingredients (e.g. inclusions or nuts)
  • If your bar melts or blooms, the flavor notes will still be present though the bar will have lost its characteristic snap. Feel free to use bloomed chocolate for making hot chocolate or baking.

About the Designer

The fabric-covered accordion box housing this Collection was designed in collaboration with acclaimed San Francisco-based artist, designer, and builder Yvonne Mouser. Yvonne’s work, which focuses on creating everyday objects that tell a story through their function, has been featured in the San Francisco Museum of Craft and Design, COPIA, and the Headlands Center for the Arts. She is co-founder of YMSF, Thought for Food, and New Factory, and her work is included in private collections around the country. We met Yvonne in 2014, and she continually inspires us by turning our design challenges into beautiful pieces of art.
