These bite-sized, caramelized-nut Dragées showcase fresh hazelnuts sourced directly from Piedmont, Italy. While in Italy, Nicholas, our Head Chocolatier, met with a chocolatier at Guido Castagna in Torino and sought out the sweet, intensely flavored Piedmont hazelnuts showcased in this confection. First, we caramelize the hazelnuts with a hint of fleur de sel, then generously enrobe them in layers of our mellow, nutty 70% Tumaco, Colombia chocolate before dusting them with delicately herbaceous Zorzal cocoa powder.

FROM ITALY TO SAN FRANCISCO

Prior to developing our Dragées, Nicholas traveled to Alba and Torino — parts of northern Italy steeped in confectionery history. While there, he received training in using our new panning equipment. We use one panner to cover nuts in caramel, and another to coat those caramelized nuts in chocolate. Though the process itself is not complicated, proper technique and timing are essential.
