These bite-sized, caramelized-nut Dragées feature fresh, California grown Braga Organic Farms almonds. When we set out to make these, our Confections team ran extensive taste tests with a dozen different almonds — some roasted, others blanched, some grown locally, others from as far as Italy and Iran. In the end, we selected Braga almonds, grown nearby in San Joaquin Valley. They’re a flavorful nut we’ve come back to time and time again. 

We caramelize the almonds with a hint of fleur de sel, then generously coat them in layers of our tropical-fruit-noted 70% Takyikrom, Ghana chocolate before dusting them with Zorzal cocoa powder.

FROM ITALY TO SAN FRANCISCO

Prior to developing our Dragées, Nicholas traveled to Alba and Torino — parts of northern Italy steeped in confectionery history. While there, he received training in using our new panning equipment. We use one panner to cover nuts in caramel, and another to coat those caramelized nuts in chocolate. Though the process itself is not complicated, proper technique and timing are essential.
