Each historic couple’s intimate correspondence is conveyed through a trio of confectionery varieties;  two distinct voices speaking alone, then melding in one love story. Within every chapter, Juicy Pâtes de Fruit and rich, crunchy nut Dragées enjoy a flavor dialogue — then conversation culminates in layered, fruit-and-nut Bonbons: a shared expression where two voices meet as one.

Love letters of Joséphine de Beauharnais and Napoleon Bonaparte; Fanny Brawne and John Keats; and Elizabeth Barrett and Robert Browning — communications carried across borders, years, and currents of human longing — come to life in gem-like Pâtes de Fruits, nutty Dragées, and alluring single-origin Bonbons, all crafted to be tasted slowly (as the accompanying letters are read thoughtfully), and remembered long after the last bite.

Robert Browning & Elizabeth Barrett

Biting into vibrant apricot and caramelized almond evokes Browning and Barrett’s once-secret connection, and their escape to Italy, where love blossomed: Their letters speak to subtlety and oneness. Apricot and almond are nearly synonymous in flavor; apricot kernel even flavors Italy’s amaretti di Saronno, standing in for almond because its taste so closely resembles bitter almond.

Napoleon Bonaparte & Joséphine de Beauharnais

This classic flavor trio is the standout of the Collection for Nicholas, with tart, aromatic cherry; sweet, nutty gianduja; and rich Tumaco, Colombia chocolate melding in harmony. Flowing seamlessly between acidity, sweetness, and depth, three confections evoke the passion and devotion of Napoleon and Joséphine — layered, indulgent, and satisfying.

John Keats & Fanny Brawne

John Keats — perhaps the most celebrated of Romantic poets — and his love Fanny Brawne are fitting inspiration for this remarkable flavor pairing. The couple’s love story unfolds on the palate as bright passion fruit meets rich, unexpected nuances of macadamia, revealing the intensity and intimacy of a brief, yet profound, union.

THE Three ORIGINS

Zorzal ESTATE,
Dominican Republic

Near the D.R.’s northern coast, within private bird sanctuary Reserva Zorzal (for the endangered Bicknell’s thrush), Zorzal Cacao grows organic cacao on farm plots interspersed with “forever wild” land, then ferments the beans, and sells them under the name Zorzal Estate. They also buy and ferment beans from independent farms around the Reserva, and sell them under the name Zorzal Comunitario. Cocoa income helps fund the Reserva’s conservation efforts; in 2023, Zorzal Cacao earned the first cacao-farm Bird Friendly Certification.

TUMACO, COLOMBIA

Cacao Hunters, the first Colombian company to source cacao and produce cocoa and chocolate within Colombia, is owned by Carlos Ignacio Velasco and Mayumi Ogata, who met in Japan in 2009. They have since worked to produce high-quality cocoa in conflict-challenged areas of Colombia: Cacao Hunters supports farmers who grow local cultivars, paying stable, higher-than-market prices for good cocoa; and they assist regional associations which ferment their own cacao. Carlos and Mayumi, open as they are to innovation, are ideal partners.

Takyikrom, Ghana

Dandelion Chocolate sources Ghanaian cocoa exclusively from the community of Takyikrom, in the country’s southern Ashanti region. Hailing from the mountainous region of Kwahu, Takyikrom’s first chief, Nana Takyi, established the village in 1950; it boasts a rich tradition of cacao farming, which remains central to the lives of its 320 farmers, comprising 206 men and 114 women. Takyikrom has long been the center for organic cocoa production in Ghana, and is recognized for its sustainable farming practices.

Head Chocolatier Nicholas Bonamico runs Dandelion’s Confections program; his small team produces our Single-Origin Truffle Collection, Single-Origin Chocolate Nut Spreads, and seasonal confections by hand. Nicholas takes inspiration from nature’s abundance in the Bay Area and around the world, as well as from confectionery tradition, and the team. He relies on farmers to grow cacao and other flavorful ingredients; upon chefs and mentors who've taught him along the way; and on other teams’ fresh ideas and perspectives. His ultimate goal is for his many inspirations to meld in one delicious bite.
