One of the most magical things about single-origin, two-ingredient chocolate is the intensity of flavor in every square. To appreciate the varied aromas of small-batch chocolate fully, we recommend tasting bars side by side.

With this tasting set, we wanted to create an experience of sampling and comparing several origins, just as we share with guests who visit our factories. Tasting chocolate, like tasting wine, is a great way to develop your palate and hunt for the distinctive flavors of cocoa beans that have been fermented, dried, and roasted to highlight their differences. It’s delicious and a lot of fun!

All of our single-origin chocolate is made with just cocoa beans and sugar; no added cocoa butter, lecithin, or vanilla. Our chocolate is free of soy, dairy, eggs, and gluten, and it is made in a factory that does not process nuts.

Storage instructions:

  • Store in a cool and dark place; back of pantry is ideal
  • Best results somewhere between 40°F-68°F.
  • Keep away from heat and direct sunlight.
  • Keep away from strong odors.
  • Do not freeze.
  • Two-ingredient chocolate won’t go “bad” like milk chocolate or chocolate with additional ingredients (e.g. inclusions or nuts).
  • If your bar melts or blooms, the flavor notes will still be present though the bar will have lost its characteristic snap. Feel free to use bloomed chocolate for making hot chocolate or baking.

Shelf life:

Stored properly, your chocolate bars will remain ready to enjoy for many months.

THE three ORIGINS

Río Samaria, MEXICO

Río Samaria is located in Tabasco, Mexico, a land recognized as the cradle of cacao. In a region where most beans skip fermentation in favor of lavado (a traditional washing and sun-drying process), Alejandro Zamorano of Revival Cacao recognizes that heritage requires evolution. By fermenting beans for seven to nine days, Alejandro has successfully introduced Río Samaria cocoa to the international specialty market.

Semuliki forest, Uganda

Near the town of Bundibugyo in western Uganda, Semuliki Forest cocoa is grown by roughly 1,000 organically certified regional farmers, of whom 52 percent are women. Fermentation varies from five to six days, and beans are sun-dried on portable raised decks for six to seven days, and then blended to create consistent lots of delicious beans before export.

MAYA MOUNTAIN, BELIZE

Located in Toledo, near the eastern coast, Maya Mountain Cacao (MMC) is the first company in Belize to buy wet beans from farmers, and to emphasize the importance of bean quality. MMC currently buys from 450 farmers who are registered and certified organic — the majority of whom identify as indigenous Q’eqchi’ and Mopan Maya.
