This five-piece seasonal collaboration with Chicago’s Katherine Anne Confections breaks free from Midwestern niceties. Each Bonbon features a layer of unapologetically vibrant Wisconsin cranberry pâte de fruit, atop decadent blood-orange chocolate ganache accented with a spicy hint of ginger. Our 70% Ambanja, Madagascar chocolate, with its juicy, tangy fruit notes, draws out the brightness of the cranberry and citrus while deepening the confection’s bittersweet edge. Owner Katherine Duncan, who grew up on a Wisconsin farm, carries that heritage into her work by supporting nearby farms and sourcing local Midwestern ingredients.

Katherine Duncan’s commitment to supporting local farms, people, and the earth stems from her childhood spent on a Wisconsin farm, using cream from her family’s Jersey cows to make caramels. She started off selling these caramels for twenty-five cents per piece, all the while fostering a love for confections that ultimately led to the official launch of Katherine Anne Confections in 2006. She uses local cream, organic sugar, and Midwestern ingredients to make ridiculously delicious truffles, caramels, and marshmallows.
