Choosing the best chocolate pairing
In our Confections kitchen, Nicholas taste-tested the Albion strawberries with every one of our chocolates, and selected two origins whose tasting notes best complement the berries’ aromas. “This pairing is all about the deep flavor experience,” says Nicholas.

In the agricultural heart of Monterey County, California, Ichigo Farms sustainably cultivates the sweetest, juiciest Japanese and American ichigo (strawberry) varieties, even throughout winter’s chill. Third-generation Japanese-American family farmers use the same hydroponic wooden greenhouses hand-built by their grandmother after she immigrated from Japan in the 1950’s, and implement solar energy and all-recycled water to balance light, nourishment, and warmth, carefully nurturing each strawberry to its full ripeness and flavor potential. Conventional pesticides and fumigation are never applied.
