Our new Hojicha Tokyo Gâteau marries two of Dandelion Chocolate Japan's most defining offerings: the Tokyo Gâteau, and Hojicha Hot Chocolate, a long-time guest favorite at our flagship Dandelion Japan café. Our Japan team sources hojicha tea from Nakamori Seicha, which grows green tea known for its remarkable depth of aroma and flavor. While many hojicha producers outsource the roasting process, Nakamori Seicha hand-roasts their tea leaves in small batches at their own facility in Watarai, Mie Prefecture.

Our Tokyo Pastry team infuses the subtly smoky tea into organic sugar, preserving the hojicha’s warm notes of toasted nuts and caramel. They then blend the fragrant sugar with rich local eggs, sweet Hokkaido butter, and Dandelion Japan’s 70% Kpalimé, Togo chocolate — specifically selected for its brownie, cream, and caramel notes, which beautifully complement the hojicha’s distinctive, deeply toasted aroma.

MADE WITH ONLY FIVE INGREDIENTS

A bowl of melted chocolate with a spatula mixing it.
Ingredient 1

SINGLE-ORIGIN CHOCOLATE

Dandelion Japan makes each Gâteau with their single-origin chocolate, highlighting the distinctive flavor notes of individual cocoa harvests.

Ingredient 2

ORGANIC CANE SUGAR

The organic cane sugar in this Gâteau is exceptionally clean in taste. It comes from the Native Green Cane Project, whose sustainable, regenerative sugar plantation is about 200 miles northwest of São Paulo.

A bowl filled with granulated white sugar.
Two egg yolks in a white bowl, with an egg beside it.
Ingredient 3

NUTRIENT-RICH EGGS

Japan’s prized eggs come from chickens given a special nutrient-dense diet, with carotenoids to deepen the color of umami-rich yolks. These eggs are so good that they often top Japanese dishes raw.

Ingredient 4

HOKKAIDO BUTTER

This butter is churned on the northern island of Hokkaido, where cows graze on wide, green pastures amid a cool climate. It’s both high in fat and exceptionally rich in flavor, with a slight vanilla-like sweetness, adding to the lush texture and taste of this cake.

Block of butter wrapped in paper.
A wooden spoon with coffee grounds in a metal bowl.

FROM KURAMAE TO
SAN FRANCISCO
We launched Dandelion Chocolate Japan in collaboration with Seiji Horibuchi in 2016. Seiji frequented our Valencia Street café, and we developed an immediate rapport based on our shared love of chocolate. He proposed taking our chocolate international by building a new factory in Kuramae, old Tokyo — an area known for artisan workshops and a craft culture. Here, Dandelion Japan’s Pastry and Confections teams create elegantly flavorful chocolates and desserts.
