Our Chocolate Makers believe great chocolate begins long before cocoa reaches their hands. They approach every new harvest with deep respect for the farmers’ and producers’ careful cultivation, fermentation, and drying, and spend weeks running small test batches, tuning flavor profiles, and coaxing out each bean's best inherent flavors.

This five-bar set features our team’s personal selections — not necessarily our bestsellers but the five bars our Makers keep coming back to themselves. Each bar represents a different origin, chosen for its distinctive character: from the nuanced genetics of its cacao, to the influence of terroir and the complexity of fermentation. These are the harvests that captured our Makers' attention; and for some bars, the tie is personal: a specific region a maker explored, a grower they know by name, or a flavor that evokes a long-held childhood memory.

THE Five ORIGINS

Semuliki forest, Uganda

Near the town of Bundibugyo in western Uganda, Semuliki Forest cocoa is grown by roughly 1,000 organically certified regional farmers, of whom 52 percent are women. Fermentation varies from five to six days, and beans are sun-dried on portable raised decks for six to seven days, and then blended to create consistent lots of delicious beans before export.

Kokoa Kamili, Tanzania

Brian LoBue’s and Simran Bindra’s social enterprise, Kokoa Kamili, buys freshly harvested, unfermented cacao beans from local smallholder farms and ferments them in a centralized facility. The resulting flavorful cocoa fetches a premium price that makes its way back to cacao growers.

Takyikrom, Ghana

Located in Toledo, near the eastern coast, Maya Mountain Cacao (MMC) is the first company in Belize to buy wet beans from farmers, and to emphasize the importance of bean quality. Based around a centralized fermentary, MMC purchases from family farms in southern Belize, committing to a consistent price throughout the season. MMC currently buys from 450 farmers who are registered and certified organic — the majority of whom identify as indigenous Q’eqchi’ and Mopan Maya.

TUMACO, COLOMBIA

Having built strong alliances with Tumaquian producers, Cacao Hunters support local families by providing stable, higher-than-market prices for good cocoa. They work with a variety of regional associations, each of which ferments its own cacao with the company's assistance and advice. Beans from Tumaco make up more than 60 percent of the cocoa that Cacao Hunters uses for their own chocolate brand; we feel fortunate to be able to procure some of these flavorful beans to use ourselves.

costa esmeraldas, ecuador

Freddy Salazar, the general manager of Costa Esmeraldas, produces a fascinating and unique cacao that we make into one of our best selling bars. Located in the Esmeraldas Province of Ecuador, Costa Esmeraldas started as a very different farm when the Salazar family purchased it over a decade ago. The aim at Costa Esmeraldas is to co-exist with their surroundings. It is extremely important to them to remain a good neighbor to their nearby communities, flora, fauna, workers, and everyone involved in or impacted by their operations.
