"Since this was my first time developing an 85% chocolate, I wanted to create a flavor that would go beyond the common impression that high cocoa content equals bitterness. I aimed to highlight the bright and fruity characteristics unique to Semuliki Forest, Uganda cocoa while creating a chocolate that would feel balanced, approachable, and clean on the finish rather than overly heavy. I hope people will enjoy this bar during a quiet evening or as a small moment to reward themselves."

Near the town of Bundibugyo in western Uganda, Semuliki Forest cocoa is grown by roughly 1,000 organically certified regional farmers, of whom 52 percent are women. Fermentation varies from five to six days, and beans are sun-dried on portable raised decks for six to seven days, and then blended to create consistent lots of delicious beans before export.
