tasting notes: dark chocolate cake, whipped cream, roasted peanut

In the Tumaco region of Colombia, cacao farmers encourage genetic diversity by cultivating regional varieties. Pablo conches these beans at a high temperature to intensify their creamy and chocolatey aromas. We taste dark chocolate cake, whipped cream, and roasted peanut.

INGREDIENTS & ALLERGENS

All of our single-origin chocolate is made with just cocoa beans and sugar; no added cocoa butter, lecithin, or vanilla. Our chocolate is free of soy, dairy, eggs, and gluten, and it is made in a factory that does not process nuts.

notes from the maker

“This time I wanted to see what would happen if I conched this chocolate at a higher temperature then I had previously for this origin. I was keen to achieve something different and I think I succeeded. Its distinctiveness stems from its smooth texture, the clarity of its chocolate and nutty notes, and its subtle hint of salt.”

– Pablo, Lead Chocolate Maker

Cacao Hunters is the first Colombian company to source cacao and produce chocolate entirely within Colombia. Owners Carlos Ignacio Velasco and Mayumi Ogata, a former pastry chef, met in Japan in 2009 and have collaborated since to produce high-quality cocoa in challenged regions. Partnering with Tumaquian producers, they support farmers growing local cultivars with stable, above-market prices. Working with regional associations, each fermenting its own cacao under Cacao Hunters’ guidance, Carlos and Mayumi combine innovation and expertise to produce exceptional cocoa.
