The cocoa for this bar comes from farms surrounding the bird sanctuary and cacao farm Reserva Zorzal. Pablo roasts the 2025 harvest to highlight creamy and deep chocolate notes, while preserving the beans’ tart-fruit aromas. We taste decadent chocolate cake, yogurt, and tamarind.

INGREDIENTS & ALLERGENS

All of our single-origin chocolate is made with just cocoa beans and sugar; no added cocoa butter, lecithin, or vanilla. Our chocolate is free of soy, dairy, eggs, and gluten, and it is made in a factory that does not process nuts.

notes from the maker

“Following extensive processing of over twenty small sample batches and multiple taste test analyses, the final selection was chosen for its distinctive and enjoyable tamarind/tropical fruit aroma. This note, alongside the existing chocolate and dairy undertones, delivers a highly pleasurable experience on the palate.”

– Pablo, Lead Chocolate Maker

Near the D.R.’s northern coast, within private bird sanctuary Reserva Zorzal (for the endangered Bicknell’s thrush), Zorzal Cacao grows organic cacao on farm plots interspersed with “forever wild” land, then ferments the beans, and sells them under the name Zorzal Estate. They also buy and ferment beans from independent farms around the Reserva, and sell them under the name Zorzal Comunitario. Cocoa income helps fund the Reserva’s conservation efforts; in 2023, Zorzal Cacao earned the first cacao-farm Bird Friendly Certification.
