Crudo means raw. At the center of each of these confections from Dandelion Japan is a whole, unroasted cocoa bean from Farm of Africa, in eastern Uganda’s Kayunga District. Those beans are exceptionally pure in flavor — they’re hand-harvested, fermented, dried, and hand-peeled. 

Rather than getting roasted at our factory, each batch of beans is treated with UV light at origin, making them safe to eat while preserving their delicate flavor notes. Our Tokyo makers coat each bean in raw organic Brazilian cane sugar, then layer on tangy-sweet Semuliki Forest chocolate, crafted with beans grown in western Uganda. Lastly, a dusting of powdered sugar. Two terroirs and two forms of cocoa meet in one balanced bite.

This is the first time we’ve been able to offer unroasted single-origin cocoa beans coated in single-origin chocolate. The beans’ sharp, distinctive flavors are on full display, as is Dandelion Japan’s craftsmanship.

CRAFTED IN TOKYO

We launched Dandelion Chocolate Japan in collaboration with Seiji Horibuchi in 2016. Seiji frequented our Valencia Street café, and we developed an immediate rapport based on our shared love of chocolate. He proposed taking our chocolate international by building a factory in Kuramae, old Tokyo — an area known for artisan workshops and a craft culture. Today, our Tokyo team continues to make bars, confections, and pastries, and we are fortunate to receive small batches that we may offer stateside.
